FOOD AS MEDICINE
Prunes and apricots have been well known as a remedy for constipation due to their high fiber content, especially insoluble fiber to fuel healthy gut bacteria. Prunes have been seen to help to soften stool, increase bowel movement frequency and decrease digestive pain. I always say, however, that too much fiber without adequate water can act like a brick instead of a broom! This puree includes coconut oil to aid in lubrication of the bowels and can be taken as a tea to increase fluid consumption and manage dehydration, a very common cause of constipation in the first place! Apricots can be subbed for prunes in this recipe and will yield similar results!
INGREDIENTS
½ cup extra virgin coconut oil
¼ cup lemon juice
½ cup dried prunes or apricots, soaked in warm water about 1 hour then strained
1 Tbsp honey (optional)
¼ tsp Himalayan pink salt

DIRECTIONS
In a blender or food processor mix melted coconut oil with room temperature lemon juice and apricots (if cold will clump the coconut oil) salt and optional honey. Once all well incorporated store in a ball jar to have 2 tbsp portions daily heated with warm water as added like a tea. You may also eat with a spoon in 2-3 Tbsp portion (YUM) and then follow up with 16 oz room temperature water.
