Keto Cheddar Onion Biscuits

These seriously addictive keto biscuits are reminiscent of the famous cheddar biscuits from a certain seafood chain restaurant without the carbs, gluten, crappy oils and preservatives! See the laundry list of ingredients in their biscuit mix below, yuck! Our version uses almond and coconut flour to provide a quality, grain-free base that adds protein and healthy fats, real shredded cheddar cheese without anti-caking agents as well as freshly caramelized onion and chives to add a pop of flavor and boost of antioxidants. These can be eaten alongside any meal (we served with our Turmeric Chicken Thighs from the Adrenal Rehab Program) or as a snack with a pat of grassfed butter! Plus, the macros are on point with 19g fat, 8g protein and 4g total carbs for 2 biscuits (2g net).

Cheddar Bay Biscuit Mix: Enriched Bleached Flour (Wheat Flour, Malted Barley Flour, Niacin, Reduced Iron, Thiamin Mononitrate, Riboflavin, Folic Acid), Palm and Soybean Oil, Less than 2% of: Baking Soda, Salt, Sodium Aluminum Phosphate, Monocalcium Phosphate, Dextrose, Buttermilk, Ascorbic Acid, Enzymes. INGREDIENTS

1/2 yellow onion, sliced

2 tsp butter

2 cups blanched almond flour

1 Tbsp coconut flour

1 tsp ground black pepper

2 tsp gluten-free baking powder

2 tsp garlic powder

1/2 tsp Sea salt

1 large egg (whisked)

1/3 cup coconut milk (full fat, from can)

1/3 cup butter (melted)

2 cups cheddar cheese (shredded)

2 Tbsp chives

DIRECTIONS

Heat a cast iron skillet over medium heat and add 2 tsp butter. Add the sliced onion and pinch of salt and stir to coat. Allow onion to caramelize, stirring every 5 minutes or so, while you assemble the rest of the ingredients. 

Preheat the oven to 350F and line 2 baking sheets with parchment paper. Combine the almond flour, coconut flour, black pepper, baking powder, garlic powder and sea salt in a medium bowl. In a separate bowl, whisk the egg, coconut milk, and melted butter. Add the cheddar cheese, caramelized onion and 2 Tbsp chives and stir to incorporate. Slowly add the wet ingredients to the dry and stir until incorporated and a dough forms. Using a cookie scoop, scoop out dough into 1/4 cup portions and pat down slightly to form. Leave about 1 inch space between biscuits. Bake 18-20 minutes until browned.
