Keto Pork Rind Nachos

Pork rinds are a great source of glycine, an amino acid that is very often deficient in the Standard American Diet because many of us are not focused on eating the whole animal or a nose to tail philosophy. Glycine is also found in bone broth as well as tougher cuts of meat that require a braise like shanks and roasts and can aid in sleep and relaxation as well as joint and gut health. When choosing pork rinds as a keto friendly snack option, opt for brands that use pasture-raised pork like Epic or 4505 Brands! Read the label to make sure the pork has been fried in its own fat–you want the ingredient list to be just pork skin, salt and spices or seasonings! Pork rinds can also be used in place of breadcrumbs for chicken tenders or in place of croutons on a salad! These pork rind nachos are versatile in that you can use any leftover protein–carnitas, ground beef or pork, pulled chicken etc. and can choose your own adventure with the toppings!

INGREDIENTS

1 large bag pork rinds (0.5oz)

12 oz leftover pork carnitas or ground beef

1/2 cup shredded cheddar cheese

1/4 cup red onion, diced

1/4 cup pickled jalapeno slices

For serving:

1 avocado, diced

4 Tbsp cultured sour cream

4 Tbsp salsa of choice

DIRECTIONS

Set the oven to broil. Spread pork rinds in a single layer on a baking sheet. Layer with the carnitas or ground beef and sprinkle with the cheese. Add the red onion and jalapeno slices and broil about 6-8 inches from flame for 3-4 minutes until cheese is melted. Add remaining toppings and serve hot.
