Avocado Detox Soup

Cucumbers are incredibly hydrating, and staying adequately hydrated during the hotter months is crucial. It has a diuretic property (especially helpful in the dry summer months), which acts to flush toxins out of the body and maintain healthy tissue and skin. Cucumber is low in calories while providing fiber, phytocompounds, B vitamins, phosphorus, calcium, zinc and other minerals. 

This chilled soup provides a refreshing delivery of detox supporting nutrients. The creamy avocado and olive oil balance out the onion, garlic, and cucumber. The cilantro and chili peppers aid in metal detoxification and thermogenesis or caloric burn aiding in metabolic health. Serve this with your fave grilled meat or as a nourishing stand alone snack. INGREDIENTS:
1/2 cucumber (peeled and de-seeded plus additional cuke for garnish)
1 Tbsp onion (minced)
1 clove garlic
1/2 avocado, peeled
1 Tbsp lemon or lime juice
1 Tbsp apple cider vinegar
1/3 cup cilantro
1/2 cup filtered water
1/4 tsp sea salt
1/4 tsp chili powder
1 dash of cayenne pepper
1.5 tsp extra virgin olive oil

DIRECTIONS:
Throw avocado, cucumber, onion, garlic, lemon juice, vinegar, cilantro, and water in vita-mix. Puree on high speed until smooth. Blend in salt, chili powder and remaining ingredients. Be sure to have blender running when adding olive oil to best emulsify into soup. Serve, garnishing with extra cucumber cubes and smoked paprika if desired. Optional: top with kale chips as garnish.
