Watermelon, Cucumber and Feta Salad

FOOD AS MEDICINE:
Stay hydrated this summer by choosing fresh fruits and veggies, which help to volumize our intake and create a feeling of fullness. Watermelon and cucumber both boast particularly high water content, which help to increase hydration while holding over our appetite and also providing a nice delivery of antioxidants. Watermelon is high in the antioxidant lycopene, which helps to prevent against certain types of cancer and is heart protective. It has also been shown to have blood pressure lowering effects and is a natural diuretic. Cucumbers are also known for their hydrating effects and are high in B vitamins as well as potassium and fiber.

Makes 4 Servings

INGREDIENTS:
4 cups watermelon, seeded and cubed
½ red onion, thinly sliced
1 medium cucumber, peeled and diced
¼ cup feta cheese, cut into ¼ inch cubes
3 Tbsp fresh mint, cut into thin ribbons
2 Tbsp pine nuts
3-4 cups arugula
¼ cup Simple Balsamic Vinaigrette

DIRECTIONS:
In a large bowl, combine the cubed watermelon, cucumber, red onion and feta cheese. Fold in the mint and pine nuts. Place on top of a bed one cup arugula and drizzle with Simple Balsamic Vinaigrette. To make it a meal, top with 4-6 oz grilled chicken or roasted salmon.

Simple Balsamic Vinaigrette
INGREDIENTS:

¼ cup balsamic vinegar
1 tsp grade B maple syrup
2 tsp Dijon mustard
pinch sea salt
½ tsp black pepper, to taste
¼ cup olive oil or walnut oil

DIRECTIONS:
Combine balsamic through black pepper, while agitating or whisking pour in olive oil or shake vigorously.
