Cabbage Slaw with Zesty Citrus Dressing

This cabbage slaw pairs perfectly with grilled meats or carnitas as the bright light acidity and crunchy fiber break up the heaviness of fatty meats. Massaging the cabbage first reduces the digestive stress of the high fiber veggie. Cabbage Slaw with Zesty Citrus Dressing

Makes: 8 Servings, about 2 cups each

Ingredients:

  • ½ head green cabbage, shredded
  • ½ head red cabbage, shredded
  • ½ tsp sea salt
  • ½ cup Zesty Citrus Dressing, entire recipe 
  • 1 mango, sliced into thin matchsticks
  • 1 avocado, cubed
  • 1 bunch green onion tops, thinly sliced
  • 1 bunch cilantro, torn
  • Serrano pepper, sliced thinly

Directions:

Combine cabbage in a large bowl and mix well until evenly distributed, sprinkle in sea salt and gently massage into the cabbage to activate enzymes and improve digestibility. Toss mixture with Zesty Citrus Dressing, then gently fold in the mango and avocado to ensure not to bruise or over mash. Sprinkle in green onions and most of the cilantro reserving some for garnish. Refrigerate about 30 minutes to allow flavors to meld. When ready to serve, garnish with remaining cilantro. Top with serrano pepper slices as desired for spice threshold.

Zesty Citrus Dressing

Makes: 1 cup

Ingredients:

  • juice of one orange, about 3 Tbsp fresh orange juice
  • juice of one lime, about 1 Tbsp fresh lime juice
  • 2 tsp raw unfiltered honey 
  • 1/2 tsp sea salt 
  • 1/4 tsp cracked black pepper
  • 1 Tbsp champagne vinegar 
  • 1/3 cup extra virgin olive oil 

Directions:

Whisk together citrus, honey, sea salt, and vinegar. Once combined continue whisking and slowly pour in olive oil to emulsify and create creamy texture.
