This recipe is a throwback from my first ever cookbook, Naturally Nourished. Herb Roasted Nuts make a great midday snack, add to a charcuterie plate, or an adult lunchable paired with quality deli meat, cheese, and maybe some crudités.
These herb roasted nuts have a rustic, herbaceous, crunch with a subtle sweetness and a hint of heat. Herb roasted nuts are a fun crowd pleaser that go well on any cheeseboard for the holidays. They can also be made for gifts as stocking stuffers. Nuts are not only delicious but heart healthy. They can have a favorable impact on lipids, boosting HDL while lowering LDL. In addition, nuts are a good source of fiber as well as fat soluble antioxidants including Vitamin E.
Makes: 20 Servings
2 cups almonds
2 cups pecans
1 cup cashews
1 cup chopped brazil nuts
1/3 cup maple syrup
pinch cayenne
2 Tbsp coconut oil
1 Tbsp each: chopped fresh rosemary, basil, thyme
Generous pinch of sea salt
Mix nuts and set aside. In a bowl mix maple syrup, cayenne, coconut oil and herbs. Stir in nuts and ensure all are equally coated. Spread on parchment paper and
sprinkle with sea salt. Bake at 300 for 15 min at center rack, then additional 10-15 min at top rack until liquid evaporates.
