Raw Walnut Fudge

FOOD AS MEDICINE:
This raw walnut fudge recipe is loaded with healthy fats from coconut oil! Coconut oil is a medium chain fatty acid that can rev up your daily caloric burn and aid in weight loss. Studies have shown that coconut oil can improve the ratio of good cholesterol (HDL) to bad cholesterol (LDL). Aside from being rich in antioxidants and having anti-inflammatory properties, coconut oil is also antifungal, antiviral, and antibacterial. The oil also has the active compound, lauric acid, which is believed to have the ability to fight infections. Although very healthy, coconut oil is still considered a fat. At 120 calories per tablespoon, it’s important to consume in moderation.

INGREDIENTS:
1 cup walnuts soaked for 2-4 hours, strained
⅓ cup raw cacao powder
½ cup melted coconut oil
⅓ cup maple syrup
2-3 tablespoons raw cacao nibs
½ teaspoon coarse sea salt

DIRECTIONS:
Blend all ingredients, except the sea salt, in a food processor. Line a small pan with parchment paper and spread out mixture, pressing into the pan. Sprinkle with sea salt and lightly press into the surface. Chill in freezer for at least one hour. Cut into pieces and serve.
